Beef jerky is a dried and cured meat typically made from beef. It is generally made by slicing thin beef strips and marinating them in a mixture of spices, salt, and other flavourings. The meat is then dried to remove moisture, which helps to preserve it and extend its shelf life. This process results in a flavorful, chewy, and protein-rich snack that many people enjoy.
- Cut strips 2–3 mm thick, and season with dry spices or a marinade. Leave overnight. With dry spices, you get a spicier taste. With marinade, the flavours penetrate the meat better.
- There are lots of different recipes for marinades and rubs online. However, remember not to use marinades with fat as it delays the drying process, and the meat may go bad.
- The safest way is to marinate the meat, fry it lightly and finally dry it at 68°C (155°F).
